Charcoal briquettes are used to completely cover the bottom of the grill for direct cooking. The charcoal are piled together and then lighted. After the charcoal turns white, it indicates that they are ready to be spread over the grill’s bottom layer. As you might have read from some other tips, foods such as baked potatoes, thin steak and hamburgers are cooked using this method with a high temperature.


Whereas for the indirect cooking method, before you burn the briquettes into a whitish colour, place equal amount of those charcoals on each side of the bottom of the charcoal grill. Spare ribs, meatloaf, chicken and lobster tail for example, are excellent choices for this method of grilling. You have to place the grill cover over the grill though.
