Preparation
Remove shells and heads of prawns Slice through the backs of the prawns and marinate them in soy sauce and pepper for 10 munutes
Heat the vegetable oil in a wok or large frying pan. Add chopped spring onions and ginger and stir-fry. Add onions, pineapples and tomatoes and stir-fry together. Heat the vegetable oil and add finely chopped garlic, followed by prawns. Pour in sweet and sour vegetable sauce and mix well. Add snow peas, sweet corn, onion, pineapple and tomato. Stir-fry quickly (otherwise, tomatoes becone too soft and overcooked), then remove from heat. Serve the dish with warm jasmine rice.
