Ingredients
300 grams prawns, 1/4 cup scalded snow peas, 1/4 diced pineapple, 1/2 cup diced tomatoes, 1/2 cup diced onions, 2 tablespoons sweet corn, 3 cloves finely chopped garlic, 2 tablespoons vegetable oil, A few pinches of pepper

Ingredients for sweet and sour sauce
1/2 onion chopped into small pieces, 1 tablespoon chopped spring onion, 1/4 teaspoon finely chopped ginger, 1/4 cup diced pineapple, 2 tomatoes diced, 2 tablespoons tomato sauce, 1/2-1 tablespoon chili sauce, 2 tablespoons dissolved maize flour, 1/2-1 cup water, 1 tablespoon vinegar, 1/2-1 tablespoon sugar, 1-2 tablespoons fish sauce, A bit of soy sauce or salt

Preparation
Remove shells and heads of prawns Slice through the backs of the prawns and marinate them in soy sauce and pepper for 10 munutes


Heat the vegetable oil in a wok or large frying pan. Add chopped spring onions and ginger and stir-fry. Add onions, pineapples and tomatoes and stir-fry together. Add some water. followed bu tomato sauce and chili sauce. Season with sugar. vinegar and soy sauce. Make sure the mixture tastes sweet and sour before adding dissolved maize flour. Stir for a few minutes until the batter becomes slightly sticky. Remove from heat.

Heat the vegetable oil and add finely chopped garlic, followed by prawns. Pour in sweet and sour vegetable sauce and mix well. Add snow peas, sweet corn, onion, pineapple and tomato. Stir-fry quickly (otherwise, tomatoes becone too soft and overcooked), then remove from heat. Serve the dish with warm jasmine rice.
