Dessert Burgers

1 cup margarine
2 cups sugar
2 eggs
1 teaspoon vanilla
2 cups milk
4 cups flour
1 cup unsweetened cocoa powder
3 teaspoons soda
1/2 teaspoon salt

Mix all ingredients together in a large mixing
bowl.

Drop by tablespoons full onto an ungreased
baking sheet.

Bake at 425 degrees Fahrenheit for about 7 minutes

Cool on wire rack.

After the cookies are cooled spread softened
ice cream on half of the cookies and top with
the other half of the cookies.

Wrap each one in 2 layers of plastic wrap and
store in a plastic container in the freezer.

This will make about 24 "burgers".

Be careful not to leave these yummy burgers
laying around unattended though. Here's why:


Last summer we were having a barbecue with
some friends. The adults were all hanging out
in our lounge chairs talking. My 3 year old
daughter was sitting at a little table nearby
eating her dessert burger when her older brother
bonked her on the head with a beach ball knocking
her to the ground.

Of course she cried and made a big scene.
But the situation got even worse when she
finally stopped crying and sat back up to
the table only to discover that our
friendly neighborhood squirrel had taken off
with her dessert!! Haha!

Good thing we had extras! You might want
to make sure that you do too - just in
case!
