High in Protein, Low in Fat: What Big Alaska Scallops Have to Offer

In Alaska, there are three different types of scallops – Bay Scallops, Rock Scallops and Weathervane Scallops. Bay Scallops are the smaller variety of the bunch, while Rock Scallops are generally found attached to rocks. The best-known variety of scallops is the Weathervane strain, which is sold as Jump Scallops on the market. The meat of Alaska Scallops varies in color, ranging from creamy white to light tan to pink. Measuring generally from ½ to ¾ an inch in diameter (with some being quite a bit larger), they live in pearly-white shells in the ocean.
The scallop fishing industry is a lucrative one, rendering the largest scallops in the world. Sustainability efforts in Alaska, however, put tight restrictions on the industry, allowing only nine permits for fishing scallops. The only commercial scallop fishery in the state of Alaska is off of the outer coast, running from Cape Spencer to Yakutat.
Alaska Scallops are sweet, tender and creamy in taste. They should become white when cooked. Ideal Alaska Scallops are consistent in size, appearance, flavor, texture and freshness. With a mild taste and a somewhat delicate texture, their average valve height is four inches.
While Alaska Scallops are not as rich in heart-healthy Omega-3 fatty acids as other seafood and fish, they are quite a nutritious option. One 3.5-ounce serving of scallops has just 87 calories – quite the bargain considering the 16.2 grams of protein such a serving also packs. Scallops are low in fat with just 0.1 gram of saturated fat per serving and also quite low in sodium. They are a great option for the weight-conscious among us.
It is possible (and suggested) to try out preparing Alaska Scallops in a variety of ways. They can be poached, sautéed, broiled, baked or fried (though frying may cut out some of the low-calorie benefits this seafood provides). Remember to cook Alaska Scallops quickly in order to maintain texture and moisture. With the full flavor scallops provide, you won’t have to do much else!
