When I was a little girl it always seemed like it took the women in my family all day to cook a meal. And don't let it be a holiday; then it was a two day event. As the years went by and I learned more and more cooking techniques I started seeing ways to create shortcuts that helped cut my cooking time in half.

As a Vegan Coach and Cook, people are always asking for simple meal tip ideas. Quick ways to create healthy meals. Easy enough I always say!

My philosophy is the quicker the better.

You see all you need are a few key items to make quick meals for those busy days. I do it often because my days are precious to me and as much as I love to cook, I don't want to be doing it all day long. We all need to find ways to make cooking fun without all the additonal fuss.


So what do you need. Here is a simple list for some delicious mexican meals to get you going:

• Organic Canned Beans
• Vegetarian Chili
• Tortilla Chips
• Brown Rice
• Salsa
• Onions
• Garlic
• Celery
• Bell Peppers
• Boca Crumbles
• Canned Olives


With just those few items you can create simple quick meals that everyone will enjoy.

For example using chili, tortilla chips, salsa, onions, garlic, bell peppers and celery you can make a very nacho meal. Cook a pot of rice and open a canned of black or green olives to add to the plate. This meal will take you about 30 minutes to cook. If you want to do something different try a Mexican pie layering the ingredients between tortilla shells and cooking for about 20 minutes.


Or what about a Taco Salad. Take a can of beans, cook the crumbles with chili, garlic, and onion powder. Add some chopped onions and garlic to the crumble mix. Cook for about 15 minutes. Place the mixture on a bed of lettuce and top with meat mixture, beans, salsa, tomatoes, cilantro and olives.

There are so many ways you can use the ingredients listed to make a meal with a mexican flair. And you can do the same for just about any meal you want to create. You can make indian meals, italian meals, southern favorites or even a smorgasboard of your favorite in less than 30 minutes.

It is really simple to create quick vegan meals. All you need to do is purchase some key ingredients and you have a few 30 minute meals. These meals are wholesome and healthy without the fuss and sweating in the kitchen.
