Best Recipes: Pecan Mandarin Salad

Bring a little taste of Asia to your salad bowl with this elegant pecan mandarin orange salad. Romaine lettuce gives it a healthy green color, mandarin orange slices adds a fruity flavor, cucumbers and pecans give it a healthy crunch, and red wine vinegar adds a touch of tangy enjoyment.

2 1/2 cups romaine lettuce, torn
1 (11 oz.) can mandarin oranges, drained
1/3 cup cucumber, sliced
1/4 pecans, coarsely chopped and toasted
1/4 cup evaporated milk
2 tablespoons sugar
1 tablespoon red wine vinegar
1/8 teaspoon pepper

Directions

Combine romaine lettuce, oranges, cucumber and pecans in a bowl.

In a glass jar with a tight lid, combine milk, sugar, vinegar and pepper. Shake jar until well mixed. Pour dressing over salad and toss thoroughly to coat.
